Original Fish x Valentin Devigus

For this Chef’s Table, Original Fish returns to Signau House for the third time – this time together with Valentin Devigus.

Behind Original Fish are brothers Benedict and Georg von Tscharner. Their work is defined by an uncompromising commitment to quality, provenance and transparency. Fish is not simply prepared here – it is understood, from the method of catch to the final cut.

What fascinates us most is their almost obsessive dedication to the product itself. Clarity over spectacle, craftsmanship over distraction.

Joining them is Valentin Devigus, bringing his own distinctive culinary perspective. They first met him as a customer; what remained was a shared philosophy. His cooking is precise, restrained and driven by a genuine passion for fish and seafood.

The evening is equally shaped by Cosmo Steinmetz, Managing Director of Original Fish, and Marc Bühlmann, whose calm professionalism guides both service and wine pairings throughout the experience.
